Lajos Szente on Recent Trends in Food Applications of Cyclodextrins

Lajos Szente, former CEO of CycloLab, gave a talk on the recent trends in food applications of cyclodextrins at the meeting of the Food Science and Safety Working Group of the Hungarian Academy of Sciences (Sep 17, 2021).
Starting with the history of food applications, Lajos Szente demonstrated the classical way of using cyclodextrins (solubilization, stabilization of food ingredients), the technological applications (removal of certain components, stabilization of starch against aging processes, packaging, etc.) and the use of cyclodextrins as bioactive components (soluble fiber, control of glycemic index of foods, effects on digestion of lipids and carbohydrates).
